Married chefs Allison Katz and Fritz Beckmann have been cooking dinner at Kyle’s on Shelter Island since July 4th. Their menus focus on fresh ingredients, local fish and produce, and are buying from local farms as much as possible, including from Bette Lacina and Dale Haubrich’s Under the Willow farm in Sag Harbor and KK’s on the North Fork. Dinner at Kyle’s feature appetizers and entrees that include house made ricotta, duck mousseline and pasta dishes.
Fritz trained at the CIA in Upstate NY and has worked in many Manhattan restaurants, among them Tao, the Russian Tea Room and most recently Morimoto.
Allison attended the French Culinary Institute, and has worked for Abigail Kirsch, as a private chef and as a chef at both the Calhoun school in Manhattan and the Ross School here on the South Fork, helping to bring the idea of farm to table ingredients to the kids attending these schools.
